Demetres
Toronto-founded artisanal dessert restaurant and craft ice cream company operating 12 dessert restaurants, 5 Scooped by Demetres boutiques, a grocery pint line and a wholesale division, all produced in-house in Woodbridge, Ontario.
Demetres is an artisanal dessert restaurant and craft ice cream company founded in 1989 on the Danforth in Toronto. Over more than 35 years it has grown to 12 Demetres dessert restaurants across the Greater Toronto Area and five standalone ice cream boutiques operating under the Scooped by Demetres brand. The company is Canadian owned and operated.
Production is handled in-house at a 20,000-square-foot manufacturing facility in Woodbridge, Ontario. Ice creams, cakes, sauces and desserts are made from scratch, with vertical integration across formulation, production and retail intended to maintain tight quality control. The ice cream is made with Ontario dairy and specified ingredients including 100% real vanilla, Barry Callebaut Belgian chocolates, house-made fruit purees and caramels, and Italian nuts.
The product is positioned at the top of the market on butterfat content: Demetres ice cream contains 19% butterfat, against a Canadian legal minimum of 10%, roughly 12% for premium competitors and 14–16% for super-premium brands. Sales run through four channels: Demetres dessert restaurants, Scooped by Demetres boutiques, grocery pints sold at local stores as a retail CPG line, and a growing wholesale division supplying customers beyond the company's own footprint.
Relevant technical domains include food manufacturing and production, ice cream formulation, scratch-made dessert production, vertical integration and quality control, retail CPG product development and wholesale distribution.
